Chocolate mousse cake

With MEGGLE Creme Decor

Ingredients

80 g High-quality dark chocolate
50 gButter
2Whole eggs
2 TBSPCane sugar
70 gPlain flour
Salt
1 TSPBaking powder
Marmelade to spread on the cake
Corpus (20 cm cake tin)
200 mlMEGGLE Creme Decor
100 gHigh-quality dark chocolate
3Egg yolks
TBSPCane sugar
Chocolate mousse
300 gBerries to garnish
For decoration

Preparation

Step 1

  • Melt chocolate and butter over a water bath. 
  • Beat the eggs with the sugar and add the chocolate mixture.
  • Gradually add flour mixed with baking powder and a pinch of salt.

Step 2

  • Pour the mixture into a 20 cm cake tin lined with baking paper and spread evenly with a spoon.
  • Bake for 20 min. at 180°C. Make sure the cake is not too dry. Leave to cool.
  • Spread the marmelade generously onto the cake and add berries.

Step 3

  • To make the chocolate mousse, melt the chocolate over a water bath. 
  • In another bowl, beat the egg yolks and sugar over a pan of hot water for 5 minutes until foamy.
  • Whisk the melted chocolate into the mixture and allow to cool slightly. Make sure the mixture does not harden.

Step 4

  • Whip MEGGLE Creme Decor and stir carefully into the chocolate mixture.
  • Pour onto the cake. Garnish with berries if desired.
  • Refrigerate and sprinkle with icing sugar before serving (optional).
